Camembert Cheese Tower

Camembert Cheese Tower - This centrepiece presentation is good on it's own, or it could be the focal point of a special cheese course. It is impressive, delicious and just absolutely stunning.
This one is decorated with candied orange spirals, green-fig preserves and a selection of macadamia and cashew nuts and almonds, glazed with a sherry infused sticky caramel sauce. The earthiness of the cheese, the fruitiness of the preserves and the salted caramel crunch of the nuts make it just so moreish and completely addictive.
Serve as a cheese course with a fine selection of your favourite biscuits, or as a grand finale to a fantastic meal!

Ingredients:
500 gr Cambrieni cheese
2 x 125 gr Camembert cheese
6 whole green fig preserves
16 orange rind spirals
100 gr macadamia nuts, roasted and salted
100 gr cashew nuts, roasted and salted
100 gr almonds
100 gr butter
100 gr brown sugar
30 ml pale dry sherry











Method:
Bring the cheeses to room temperature.
Cut a wedge out of the Cambrieni large enough to support the smaller Camembert. Place the wedge on top of the Cambrieni opposite the cut side.
Cut a triangle out of the Camembert, place the Camambert on top of the Cambrieni wedge and the triangle on top of the Camembert.
Your tower should have four layers of Cheese.
The second Camembert can be placed seperately with a wedge cut out and placed on top.
Heat the butter and sugar and stir until dissolved.
Cook over moderate heat for a few minutes until it becomes foamy and thickens. Add the sherry and stir. Cook until a thick caramel stage. Add the nuts and stir trough coating them with the caramel sauce.
Cut the figs into quarters and start decorating the cheese tower. Continue with the orange peel and clusters of nuts.
This is a very large recipe and would serve 12 - 18 people, even more if it is part of a cheese board or a bread table.
For a smaller amount of guests use only one or two Camembert cheeses.
Halves of Kumquat, candied melon or any other preserve of your choice will work well - even a little sweet-chilli sauce goes well with the cheese. Be creative and make this recipe your own!
