Cauliflower Soup with Truffle Oil
Cauliflower Soup with a hint of truffle oil is a delicious and creamy soup. The truffle oil gives it a luxurious finish. It is a delicate soup which is ideal for a starter as the taste is not too strong to ruin the following dishes to be served.
Ingredients:
150gr onions, finely chopped 75gr potato, peeled and thinly sliced 60gr butter 500ml light chickenstock 250ml milk 250ml cream 750 gr cauliflower florets, finely seperated salt and pepper. |
Method:
Saute the onions and potato in butter over low heat untill very tender. Add the chicken stock, milk and cream and bring to the boil. Add the cauliflower florets and gently cook until tender. Pour soup into a liquidizer and blitz until very smooth and creamy. Season with salt and pepper. Serve with croutons and a few drops of good quality truffle oil. |
