Rita's Paella
This is one of the easiest and tastiest variations of this famous Spanish dish. It is a real crowd pleaser and never fails to impress.
It is moderately easy to prepare and economical without losing the authentic character of the dish. You can however go and break the bank by adding lobster or langoustine - but it is really not necessary.

Ingredients:
All the ingredients below work well or whatever else takes your fancy. Quantities depend on your own preferences and how many people you want to feed - this is a typical party dish and not really suitable for less than six people.
Method:
Fry 1:
1. Onion,celery, carrot,sweet pepper and mushrooms in oil - keep aside
2. Fry rice in same pot.
3. Add above to rice in same pot.
4. Add chicken stock, fish stock, salt and tumeric.
5. Cook as you would with normal rice.
Fry 2:
6. Smoked sausage or chorizo, chicken wings (or cots of your choice), mixed seafood, prawns, firm white fish etc. Add garlic, lemon juice, salt and pepper to taste. Fry until just done.
Add together in a large ovenproof dish with lid:
7. Add Fry 1 & Fry 2 together
8. Add peas & Mussels in their shell.
9. Add a little wine and mix all together.
10. Place dish in oven to steam mussels and for flavours to develop.
Serve with a large green salad
