Pea, Onion and Egg Salad Mayonnaise
Quick and easy, simple and delicious - perfect for the al fresco table this summer. The combination of tender petit pois, sharpness from the onion and smooth texture of hard boiled eggs and mayonnaise really comes together in this perfect summer salad.
Made in advance it will keep for a good three days in the fridge - ready for whenever you need to serve something as a side salad.

Ingredients:
3 cups frozen petit pois (young and tender baby peas) 1 medium onion, finely chopped 150 - 200 ml mayonnaise 10 ml sugar 2 eggs, hardboiled and finely chopped Aromat and salt to taste _______________________________________________________________________________________ |
Method:
Steam baby peas lightly untill almost cooked and refresh immediately in cold water. Chop onion very fine, chop hardboiled eggs and mix through peas. Season with Aromat ad salt to taste. Pour over mayonnaise and mix through. |
